"The Jews and Christians do not dye (their gray hair), so do the opposite of what they do."

The prophet Muhammed (PBUH) stated that to differentiate oneself from the Jews and the Christians that you must die your greying/white hair, as the Jews and Christians do not. WHY is it not mandatory same as his instructions to trim the moustache and grow the beard which was also to differentiate oneself from the zoroastrians?
